“Do you wanna bake some milo muffins today?”, I asked a cranky toddler.
“YES I want!”
Big E has been nursing a bout of viral fever for the past 3 days. The fever spread to Baby E. That’s not good news for any parent.
Usually when I hit a wall, baking often has a way to calm Big E.
He’s familiar with the routine so he knew what ingredients to prepare.
I can’t say it was fun. More peaceful & therapeutic for both of us. And in times like this, I am grateful to have a helper to clean up the mess after.
Baby E can’t help bake muffins. So we baked while the baby napped.
2 cups organic self-raising flour
1 cup milo (Australian one tastes more chocolatey)
1 tbspn sugar
1/2 cup hokkaido milk
1/2 cup melted unsalted butter
1 tbpsn chia seeds
Sieve out the flour to remove any lumps.
Stir in all the ingredients, scoop them into the respective muffin tray & bake at 190 degrees Celsius for 20 minutes.
Serve & enjoy with your preschooler.
It’ll taste even better with a scoop of vanilla ice cream but none of that for sick Big E this time.
